As parents we’re all juggling the 10,000 meals a day in lockdown, not the least of which also includes keeping it interesting and healthy, and keeping kids happy. So I levelled up a kid favourite – pizza! Who doesn’t like pizza, right? So I’ve packed these mini pizzas full of flavour and the good stuff to keep our kids fuller for a little bit longer. They also pack a nutrient punch that you wouldn’t get from plain old pizza sauce and some cheese alone.

  • Store bought pizza sauce
  • Small wholemeal pitta breads
  • Dried oregano and basil
  • Veggies of choice (the more the better)


  • 1 tin white beans, drained and rinsed
  • 1/3 cup nutritional yeast
  • 1 clove garlic
  • 1 tbsp white wine vinegar
  • 1 tbsp white miso paste
  • Freshly ground black pepper

Preheat the oven to 200C. Line a baking tray with baking paper.

Combine all of your “cheese” ingredients and blend – I use a little attachment I have for my stick blender because I can throw it in the dishwasher afterwas. You can use whatever you have handy and find easiest to clean.

Spread pizza sauce over your pita breads and then spread your cheese mixture over the top.

Top with your favourite veggies. Personally we love mushrooms, olives and capsicum. You can make it even more fun by letting your really little ones build a face out of vegetables on top.

Sprinkle with a pinch of dried oregano and basil and bake in the oven for 10-15 mins or until the edges of your base start to brown.

Remove from the heat. Slice into quarters and serve warm.
